How to make kombucha
- Brew 1-2 litres of medium-strength green or black tea, for example using a cotton drawstring bag for the tea (item no. 8149b), and add 100 grams of glucose (item no. 1075) or cane sugar per 1 litre of tea. We do not recommend using Earl Grey tea, as the culture does not like this kind of tea. Note: For the first 2-3 start-ups after receiving the culture, we recommend brewing no more than 0.5-0.7 litres of tea. As the culture grows, you can increase the amount of tea. After that you can increase to 1-2 litres or more. If you want a larger batch from the outset, you can order more than one starter culture.
- Cool the liquid and pour it into a large jar or container without a tight-fitting lid, for example item no. 5810, or item no. 3148 for larger portions.
- Add the kombucha culture / SCOBY and the enclosed starter culture.
- Cover it all with a cloth, for example item no. 1011d, and let it stand in a room at 21-30 degrees, possibly on a heating plate (item no. 3150) to achieve faster fermentation or if you do not have a room at 21-30 degrees.
- Let it all ferment for about a week. When using a heating plate, however, a little less time. The product is ready when it tastes fermented and sour and no longer sweet.
- Then strain off the culture, and the drink can now be refrigerated and enjoyed within at least the coming 7-14 days. Before that, set aside 2 dl of the drink. This is used to start the next batch together with the kombucha culture.
